Minimum effort and Maximun flavor kinda dish! This coconut beef curry is inspired by South Indian flavors and has that delicious achari-style coconut taste. It’s rich, comforting, and pairs perfectly with steamed rice. The best part? You can have it ready in just 30–40 minutes if you’ve got all the ingredients on hand”.
Ingredients
Marinade:
- 1.8lb beef (thinly sliced, will cook faster)
- 1tbsp Crushed Ginger
- 1tbsp Crushed Garlic
- 1tsp paprika
- 1/2 tsp Red chili powder,
- 2tsp Turmeric
- 1/2 tbsp Garam masala
- 1/2tsp Black pepper powder
- Salt to taste
For the Gravy:
- 1/4 cup oil
- 2-3 tbsp coconut powder,
- 1/3 cup chopped curry leaves
- 1 cup thickly sliced onion
- 1/2 tsp sugar
- 1tsp vinegar
- 1 cup Coconut Milk ( or you can add .5 cup more if you want more gravy)
- 3-4 whole green chilies
Directions
- Marinate the beef chunks with all the spices listed under “marinade” for at least 10–15 minutes.
- Heat oil in a pot, add the marinated beef, and fry over high heat for 5–6 minutes.
- Add the coconut powder and continue frying for another 5–6 minutes.
- Stir in the curry leaves and cook for 1 minute, then add sugar and vinegar. Cover and cook until the oil begins to separate.
- Pour in the coconut milk and simmer until the beef is tender.
- Add chopped onions and sprinkle with green chilies before serving.
- Serve hot with rice.
- Note: Vinegar helps tenderize the meat, but too much can make it mushy—so measure carefully!
