Golden, flaky puff pastry filled with a savory, spiced beef keema mixture and melted mozzarella cheese. These bakery-style patties are perfect for tea time, Ramadan snacks, or as a crowd-pleasing appetizer. I love using curry powder in this recipe! Curry powder is a blend of spices that can easily be found at desi stores or your nearby grocery store.

Ingredients

For the Filling

  • 1 lb beef keema
  • 2 small onions, finely chopped
  • 3 garlic cloves, minced
  • 1 long green pepper or jalapeño, finely chopped
  • Salt to taste
  • 1 tbsp tomato paste or ketchup
  • 1 tbsp all-purpose flour or gluten-free flour
  • 1/2 cup water
  • 1/2 tsp soy sauce
  • 2 tsp curry powder
  • 1 tsp paprika
  • 1 tsp oregano

For Assembly

  • Store-bought puff pastry sheets
  • 2 cup Mozzarella Cheese
  • 1 egg, beaten (for egg wash)
  • Sesame seeds (optional)

Directions

  1. Heat oil in a pan over medium heat. Add the chopped onions and garlic. Sauté for about a minute until fragrant.
  2. Add the beef keema along with tomato paste, oregano, paprika, salt, soy sauce, green pepper, and curry powder. Cook until the beef is fully cooked and tender, and the spices are well incorporated.
  3. Sprinkle in the flour and mix well. Add the water and stir continuously until the flour is fully incorporated and the mixture thickens. The filling should be moist but not watery.
  4. Remove from heat and allow the filling to cool completely before assembling the patties.
  5. Roll out the puff pastry sheets and cut them into equal squares.
  6. Add a generous amount of the cooled filling to the center of one square and shredded mozzarella. Lightly egg wash the edges.
  7. Place another square on top and gently press the edges to seal.
  8. Use a fork to crimp the edges and a knife to create small decorative slits on top, if desired.
  9. Brush the tops with egg wash and sprinkle with sesame seeds.
  10. Bake at 400°F for about 15 minutes or until golden brown and puffed.

To Freeze:

  1. Assemble the patties completely but do not egg wash yet.
  2. Place them on a parchment-lined tray in a single layer.
  3. Freeze for 1–2 hours until firm (this prevents sticking).
  4. Transfer the frozen patties to a freezer-safe bag or airtight container.
  5. Store for up to 2 months.

How to Bake from Frozen

  • Place frozen patties on a lined baking tray. Let it sit for 10 mins at Room Temp. Do Not Thaw completely
  • Brush with egg wash and sprinkle sesame seeds.
  • Bake at 400°F (200°C) for 15-20 minutes, or until golden brown and fully puffed.
