I had the hardest time naming this dish, is it Fried Egg Bhuna? A Bengali-style shakshuka? Honestly, it could be so many things. What I do know is that it’s pure comfort on a plate. I like to call it my “lazy curry.” It has all the rich, cozy curry vibes, but it comes together effortlessly with fried eggs simmered in a thick, spiced masala. The flavors are bold, warm, and deeply satisfying , the kind of meal that feels like home. Serve it with warm steamed rice and a simple side of dal (lentils) for the ultimate comforting meal.

Ingredients

  • 3–4 eggs
  • ½ medium onion, chopped
  • ¼ cup tomato, chopped
  • 2–3 green chilies, sliced
  • 1 tsp tomato paste (optional)
  • Salt, to taste
  • ½ tsp turmeric powder
  • ½ tsp red chili powder
  • A pinch of black pepper
  • ¼ cup water
  • Fresh cilantro, for garnish

Directions

  1. Heat oil in a pan over medium heat. Add the chopped onions and green chilies. Sauté for about a minute until slightly softened.
  2. Add the chopped tomatoes along with the tomato paste (if using). Cook until the tomatoes begin to soften.
  3. Add turmeric powder, red chili powder, salt, and ¼ cup of water. Let the spices cook until the oil begins to separate from the masala.
  4. Crack the eggs directly into the pan over the masala. Sprinkle a small pinch of salt and black pepper over the eggs.
  5. Cover and cook until the eggs are done to your preference.
  6. Garnish with fresh cilantro and serve warm with rice.
