I had the hardest time naming this dish, is it Fried Egg Bhuna? A Bengali-style shakshuka? Honestly, it could be so many things. What I do know is that it’s pure comfort on a plate. I like to call it my “lazy curry.” It has all the rich, cozy curry vibes, but it comes together effortlessly with fried eggs simmered in a thick, spiced masala. The flavors are bold, warm, and deeply satisfying , the kind of meal that feels like home. Serve it with warm steamed rice and a simple side of dal (lentils) for the ultimate comforting meal.
Ingredients
- 3–4 eggs
- ½ medium onion, chopped
- ¼ cup tomato, chopped
- 2–3 green chilies, sliced
- 1 tsp tomato paste (optional)
- Salt, to taste
- ½ tsp turmeric powder
- ½ tsp red chili powder
- A pinch of black pepper
- ¼ cup water
- Fresh cilantro, for garnish
Directions
- Heat oil in a pan over medium heat. Add the chopped onions and green chilies. Sauté for about a minute until slightly softened.
- Add the chopped tomatoes along with the tomato paste (if using). Cook until the tomatoes begin to soften.
- Add turmeric powder, red chili powder, salt, and ¼ cup of water. Let the spices cook until the oil begins to separate from the masala.
- Crack the eggs directly into the pan over the masala. Sprinkle a small pinch of salt and black pepper over the eggs.
- Cover and cook until the eggs are done to your preference.
- Garnish with fresh cilantro and serve warm with rice.
