These Brown Butter Chocolate Chip Cookies are everything you want in a bakery-style cookie, crispy edges, soft and gooey centers, pools of melty chocolate, and a rich, nutty flavor from browned butter.

Ingredients
Flour Mixture
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
Wet Ingredients
- 1 cup browned butter
- ¾ cup dark brown sugar
- ½ cup granulated sugar
- 1 large egg
- 1 large egg yolk
- 1½ cups chocolate chips (plus extra for topping)
- ½ tbsp vanilla extract
- ½ tsp instant coffee (optional)
- 1 tbsp milk, at room temperature (only if using the instant coffee)
Directions
- In a saucepan, melt the butter over low to medium heat until it foams and golden brown specks appear. Remove from the heat immediately and let it cool slightly.
- In a large mixing bowl, combine the browned butter, dark brown sugar, and granulated sugar. If using instant coffee, dissolve it in the milk and add it to the mixture. Stir until well combined.
- Add the egg, egg yolk, and vanilla extract. Whisk until smooth.
- Add the flour, baking soda, and salt. Mix until a soft cookie dough forms. Do not overmix.
- Fold in the chocolate chips until evenly distributed.
- Scoop the dough into equal-sized balls and place them on a tray. Press a few extra chocolate chips on top of each cookie for a bakery-style look.
- Cover and refrigerate the dough for at least 30 minutes.
- Preheat the oven to 350°F (175°C).
- Arrange the cookie dough balls on a parchment-lined baking sheet, leaving space between each cookie.
- Bake on the middle oven rack for 15 minutes, or until the edges are lightly golden and the centers still look slightly soft.
- Let the cookies cool on the baking sheet for 10 minutes before transferring them to a wire rack. They will continue to set as they cool.

Notes
- For chewier cookies: Use more brown sugar.
- For crispier cookies: Increase the granulated sugar slightly.
- The cookies will be very soft when they come out of the oven.
- Allow them to cool completely so they can firm up while maintaining a chewy center.
- Chilling the dough enhances the flavor and helps prevent the cookies from spreading too much during baking.
